Hello sweet friends! I'm so glad you're here! Here's a little bit about me... I was born in Missouri, right outside of Kansas City. My family & I are die hard Chiefs fans... no seriously, my dad told my husband that he couldn't marry me unless he was a chiefs fan... I couldn't be married to a cowboys fan! We moved around a lot during my childhood, but ended up here in Corpus Christi where I still live today with my own family. When I was in 4th grade we moved all the way from Minnesota to south Texas… you can imagine my shock with the temperature difference. I went to public school for a little bit before my mom decided to homeschool my two brothers and I. Here in Corpus there's a big homeschool community, with lots of activities like drama, sports and even prom. I was a cheerleader and I actually met my husband because he played on our 6 man footbal...

Family Dinners
Family dinner is oh so important to my husband and I. I know our kids are young, but we have made it our goal to sit down at the table, with limited distractions, every night for dinner.
I've had many nights of trying to throw whatever I could together to have something delicious for dinner. Sometimes it didn't turn out (shocker, I know). I thought I would list out some of our favorite family dinners in hopes it would help one of you!
Oh, also think you should know.... I tend to take measurements as a recommendation. So if thats not your thing, I'll have the recipes linked.
Burger Bowls & Sweet Potatoes
Preheat oven to 400F. Peel potatoes and cut into desired shape. Sometimes we like them as fries, other nights I just dice them up. Season them with Garlic powder, salt and pepper. Throw into the oven for 25-30 minutes or until soft.
for the burger bowls you'll need:
- Hamburger- depends how many you're feeding, but our family of 4 does 2-3 pounds.
- Bacon
- Lettuce
- Tomato
- Shredded cheese
- Avocado
- Pickles
- Honestly, whatever your heart desires. `
Ingredients
- Pork Steaks- We get a pack of 3
- Paprika
- Pepper
- Salt
- Olive oil
- 1 tbsp unsalted butter
- Brown mushrooms
- 1 yellow onion
- 2 garlic cloves
- Dried thyme
- 1 tbsp all purpose flour
- 1/2 cup of chicken broth
- 1 cup heavy cream
- Chopped parsley
You're gonna wanna get all your prep done first:
- Cut pork steaks into 1 inch thick steaks, season with paprika, salt and pepper
- Slice the mushrooms, mince the garlic coves and chop parsley... or if you forgot fresh parsley like I did.... dried works too.
Heat 1 tablespoon oil and the butter over medium high, add pork steaks and sear about 3 minutes on both sides. Remove from skillet and add the mushrooms. Cook until they release their moisture. Add more oil and cook until golden brown. Add garlic and onion, cook until soft. Season with thyme, salt, and pepper. Add flour and stir till incorporated. Pour chicken broth in and simmer for 1 minute. Add cream and bring to a boil. Sir in parsley and add the steaks back in. Cook until steaks are done.
Chicken Sausage & Rice
Okay, this one doesn't have a link, but it is SO easy.
Ingredients
- Chicken Sausage- can be whatever your heart desires, we like to use a spinach feta one.
- Veggies- again, whatever your feeling, squash, zucchini, peppers
- 2 cups of white rice
So there you have it, 3 easy and delicious family dinners! We have a 3 year old and a one year old and they both love these meals! I hope you feel inspired to have dinner with your family this week!
